Love these!!! Who loves pizza?? I do. But I like to avoid the unhealthy kind, and make my own... with eggplant. Delicious crunch, all homemade, and my kids love them! Start by preheating your oven to 400 degrees. Peel and slice one large eggplant into thick slices. Dip each slice in some egg, then coat with gluten free breadcrumbs (or use whatever breadcrumbs you want, but I use this kind pictured below). Actually, the main reason I prefer this kind, is not necessarily because it's gluten free. The main reason is because so many other breadcrumbs out there contain high fructose corn syrup! Seriously! (Read your labels people!) But not this kind, so this is my choice. :-) Bake the eggplant slices at 400 degrees for 10 minutes on each side (20 min total). Then you are ready to top them! Use your favorite sauce, sprinkle some oregano, some fresh mozzerella cheese, then add toppings of your choice. Bake for an additional 10-12 minutes until cheese is melted. ENJOY!
